Get Grilling: Grilled Mushroom Bleu Burgers

 

Turn a simple burger into something spectacular... Grilled Mushroom Bleu Burgers!

We'll need:

  • 2 lb ground chuck**
  • 1 tsp salt
  • 2/3 tsp pepper
  • 2 tbls Worcestershire Sauce
  • 2 tbls butter
  • 1 minced clove garlic
  • ½ cup chopped onion
  • ½ lb sliced mushrooms
  • Splash of white wine
  • ½ cup bleu cheese
  • 2 tbls basil pesto
  • 2 tbls mayonnaise
  • Fresh baked rolls

** You can use a leaner beef if you prefer.  Chuck provides a juicier burger and is excellent to use when grilling burgers.

First let’s get our filling started.  In a skillet over medium heat, add 2 tbls butter, garlic and onion.  Saute 2 minutes and add mushrooms and a splash of white wine.  Continue sautéing until the liquid cooks off and the filling mix is dry.  Set aside.

Then we’ll prepare a simple Basil Mayo by mixing a good jarred basil pesto with mayonnaise, cover and refrigerate until ready to use.

Now, let’s prepare our burgers by adding salt, pepper and Worcestershire to the beef and mixing, being careful not to overwork the meat as that can make it tough.   Divide the seasoned beef into six equal balls.  With each ball make two thin patties.  Put equal portions of mushroom filling and bleu cheese over six patties and top with the remaining six patties.  Pinch edges to seal filling inside of burgers and flatten.

Grill over medium heat until burgers are done.   Serve burgers with fresh baked rolls, Basil Mayo and any toppings you’d like!     You can even make mini-burgers.... your very own gourmet sliders!

Get creative!  Here are some other ideas for delicious filling choices:  

  • Season beef with Italian seasoning and stuff with finely chopped sun-dried tomatoes and feta cheese.
  • Season beef with BBQ sauce and stuff with cheddar cheese, chopped cooked bacon and chopped sauteed mushrooms.
  • Season beef with Italian seasoning and stuff with red peppers and mozzarella cheese.

And, don’t forget the mayo.  Check out the selection of good jarred prepared pestos and tapenades at your local market.  Add them to an equal part of mayo and you can dress up burgers, sandwiches…anything!

Kids Mini-Session

You've asked for it, so here it is!  This summer we are hosting a series of 2-hour Kids Mini-Sessions where kids ages 9-13 can come and prepare two meals, see a cooking demonstration and learn about food safety...

We are limiting these mini-sessions to five children and reservations will be taken by phone.  Because we are limiting these to such a small number of kids, we will be taking payment at the time the reservation is placed.

The menu for these sessions is fixed as this will enable us to work closely with all of the children together.  Our goal is that they have a great time, prepare meals that will be enjoyed by everyone at home and also learn a little something new!  In each session, we have chosen one very child-friendly dish and one dish that is meant to open them just a little to exploring other flavors. 

Cost for each session is $45 and they are "individual" sessions, i.e. you don't need to sign up for all of them, though you may if you wish.

 

**Thursday, June 17th @ 1pm.  $45/child**

Demonstration: We will cook the Fiorini Pasta with Sweet Sausage and Zucchini and let the kids try it so they can then customize it to their taste (or at least half of it!) when they prepare the dish.

The kids will prepare the following dishes to be cooked at home with you at your convenience (all will be packaged ready to freeze):

  • Fiorini Pasta with Sweet Sausage and Zucchini
  • Pretzel Crusted Chicken Fingers & a side of Cheddar Chipotle Polenta
  • Chocolate Almond Puff Pastries

We will also talk about food safety and show them how to use an instant read thermometer which they will take home with them.

 

**Thursday, June 24th @ 1pm.  $45/child**

Demonstration: We will cook the Cashew Chicken Stir Fry over Rice and let the kids try it so they can then customize it to their taste (or at least half of it!) when they prepare the dish.

The kids will prepare the following dishes to be cooked at home with you at your convenience (all will be packaged ready to freeze):

  • Cashew Chicken Stir Fry over Rice
  • Double Stack Beef Quesadillas and Spanish Rice
  • Rocky Road Brownies

We will also talk about food safety and show them how to use an instant read thermometer which they will take home with them.   (This will vary depending on if we have a lot of repeat kids or if they are new!)

 

**Thursday, July 15th @ in the afternoon - See Calendar for details or call us.   $45/child**

Demonstration: We will cook the Greek Style Shrimp with Pasta and let the kids try it so they can then customize it to their taste (or at least half of it!) when they prepare the dish.

The kids will prepare the following dishes to be cooked at home with you at your convenience (all will be packaged ready to freeze):

  • Greek Style Shrimp with Pasta
  • Dijon Buttermilk Chicken
  • A special dessert

We will also talk about food safety and show them how to use an instant read thermometer which they will take home with them.   (This will vary depending on if we have a lot of repeat kids or if they are new.)

 

These sessions have been very popular!  We are working to continue them through August for the kids.  Keep an eye on our website for details, or call us for information.  We will be happy to reserve a spot for your child.

Kids in the Kitchen!

We are often asked if a parent can bring an older child to Dinner Done.  As parents ourselves, we love to see kids learning how to prepare healthy meals!   An added benefit is that kids are much more likely to try new foods when they've had a hand in preparing the meal.

 

Mom & Me Sessions

We have a special "Mom (or Dad) & Me" Session the last Saturday of each month.  This is a great time to bring a child with you!  Space is limited in these special "Mom & Me" Sessions, so please reserve early.  We'd love to have you!

 

Other Session Times

Bringing an older child to work with you in the kitchen during any Dinner Done session is no problem, provided the following safety guidelines are met:

·         Your child must be able to work with you the duration of the 2-hour session.  We also ask that no more than two people (per reservation) be working in the kitchen - your child will be your partner!

·         Your child must be tall enough to work with you.  Our counters are standard kitchen-counter sized.  For safety reasons children may not stand on stools in the kitchen, nor are strollers allowed in the kitchen.

·         Your child must follow all normal guidelines in the kitchen – thoroughly washing hands between each table, using spoodles and spoons to work with ingredients, etc.

·         Your child must not be allowed to touch or work with any items that may be dangerous to him or her.  Dinner Done is a working kitchen. It is up to you to ensure your child is with you at all times and is properly supervised. 

        Although kids are welcome in any Dinner Done session, private parties are also great fun!  Consider arranging a parent-child private party. Your group gets the kitchen all to yourself and everyone takes home a complimentary dessert!  Click here to learn more about our Private Sessions.
